The Coronation of His Majesty King Charles

Yippee! Buckingham Palace has released details of the events due to take place between Saturday 6th and Monday 8th May - the Coronation Weekend! I actually took this day off from work so that I can ensure that I can watch it. I'll have a mini brunch as I watch it as well. lol

The Coronation of His Majesty The King and Her Majesty The Queen Consort will be taking place at Westminster Abbey on Saturday 6th May, 2023. I'm really hoping to see many of the long standing traditions and amazing pageantry take place. I've seen video's of Queen Elizabeth II's coronation and it was beautiful.

I know the Brits will be celebrating this historic event the entire weekend. Gathering for meals, having tea and all around celebrating in the streets. I would love to be there and experience it first hand, maybe when William takes the throne I can be there.

Really Lisa.. really??

Last night I got an eyelash in my eye so now my left eye is all bloodshot and red from me rubbing and trying to get it out. I have my eye drops that I've been putting my eye. I've noticed that the older I get the thinner my eyelashes are.

I woke up this am feeling pretty good a slight runny nose, and some sneezing. Had a cup of tea and went outside to grab a Amazon parcel, I bought some Polo mints from England and they're better than Lifesavers, then sent for some groceries.

Now I'm sitting at my desk with three boxes of tissues and I'm almost finished with one of them and realized that I forgot to buy allergy meds. That was my MAIN reason for doing Instacart today! This is what happens to me every bloody time when I don't make a list! LOL

BUT all in all it's a good day, the weather is beautiful and there's children laughing and squealing on the hill above my house along with the sounds of splashing water.

This is Queen Elizabeth's personal recipe for drop scones.
I really want to try to make these.
I mean it's literally just making pancakes!

Catherine Middleton's chutney recipe

 Makes 8 x 350g jars

Ingredients
1.8kg marrows, peeled, deseeded and chopped into small chunks
4 medium onions, peeled and chopped into small chunks
3 apples, peeled, cored and chopped into small chunks
225g sultanas or raisins
225g stoned dates, roughly chopped
600ml malt vinegar
900g soft brown sugar
1 teaspoon salt
2 tablespoons ground ginger
2 tablespoons mixed pickling spices, secured in a piece of muslin

Method
1. Put the chopped marrow, onions and apples into a large preserving pan, add the rest of the ingredients and the bag of spices and stir together, then place over a medium heat. Bring to a simmer, then reduce the heat and simmer gently from 1 ½-2 hours or until well blended and thick.

2. Take the pan off the heat, cool and remove the muslin, squeezing the liquid form from the bag. Spoon it into sterilized jars with vinegar-proof lids, filling them to within 1cm of the top.

3. Ensure the rims are clean, screw on the sterilized lids and store in a cool place for up to 12 months. Once open, store in the fridge and use within 1 month.

Duchess of Cornwall's Victoria sponge recipe

INGREDIENTS

110g self-raising flour
1 teaspoon baking powder
110g soft margarine or butter (at room temperature)
110g caster sugar
2 large eggs
2-3 drops of pure vanilla essence

To finish:
Lemon curd or jam (with fresh cream, optional) or Nutella or your filling of choice
Sifted icing sugar

INSTRUCTIONS
STEP 1
Pre-heat the oven to 170C, grease and line two 7-inch (18 cm) sponge tins, no less than 1 inch (2.5cm) deep

STEP 2
In a large bowl, mix sifted flour and baking powder into it, holding the sieve high to give the flour a good airing.

STEP 3
Add all the other ingredients to the bowl and whisk them (preferably with an electric hand whisk) till thoroughly combined. The mixture is ready when it can drop off a wooden spoon easily when tapped off the side of the bowl. If too dry, add 1-2 teaspoons of warm water.

STEP 4
Divide the mixture between the two tins. Bake in the centre of the oven for about 30 minutes.

When cooked leave them in the tins for only about 30 seconds, then loosen the edges by sliding a palette knife all round and turn them onto a wire cooling rack.

STEP 5
Once cool, sandwich the cakes together with lemon curd or jam (or jam and fresh cream) or Nutella or your filling of choice, and dust with icing sugar.

Quaintly Box: The Royal Edition

I just love these boxes! I really really do! As an American gal who dreams of living in Britain, this box makes my heart smile each time I get it and it makes me feel closer to Britain. I love the little magazine that comes with it. So much information about the country where my heart lies. It came with two tea bags and a package of shortbread cookies that I ate while reading the "Clanland" book. :) Last year I got two boxes, Quintessential and a snack box, and immediately wrapped them up and opened them on Christmas day. I love the contents and definitely recommend them to anyone I meet who says they love Britain.

17 of my favorite things to do at Christmas time!

~ Put up Christmas lights. I always put them up on my trees and the headboard of my bed.

~ For the past couple years I have sent Christmas cards, but this one I didn't. I lost my list of people during the move.

~ I work at a store located in the mall so I'll wander outside the store and look at the Christmas decorations.

~ This year I wanted to make your own advent calendar, but never got around to doing it. I couldn't figure out what kind of calendar to make this year.

~ Decorate your Christmas tree. I always leave my trees up year round in my bedroom. The ornaments go off, but the light's stay on and are used year round.

~ I keep the radio on all the time when I'm home and Christmas music is always playing. I have some downloaded on my MP3 player as well.

~ Decorate the house with decorations. I love making Christmas chains and snowflakes to hang in the windows and around the tree. I also decorate my desk as well. (see photo)

~ Watch The Christmas Chronicles with Kurt Russel as Santa! (My NEW must-have Christmas movie!)

~ I have a coffee/hot cocoa bar in my bedroom year round.

~ Put up  a nativity scene. I have two up in my bedroom.

~ I always buy myself some socks that are soft and fuzzy and wear those on my Christmas Day pajama day!

~ I hang stocking and stuff them as I buy the stocking stuffers. There's only adults in my house so they don't look. lol

~ I always watch the Queen’s speech. I am a HUGE fan of the British Royal Family. The Christmas messages have been taking place since 1932.

~ I light a candle and then sit down to write up a list of things and people that I'm grateful for.

~ I always have eggnog! I use it in my coffee a lot.

~ I put together a Christmas gift tin for myself that I start in January. Then come December 25th I open it up. Half the time I have forgotten what I put in there. lol. There British sweets, gift cards, holiday stationary and pens and other items. Then come Christmas Day I open it up and enjoy what's in it.

~ Drive around to look at the lights. There are a few neighborhood that have amazing light shows and all of the houses are decorated.

British Sweets : Curly Wurlys

These candy bars are excellent!
I am a firm believer that British chocolate is so much ore better than American chocolate and these candy bars have proven me right.
The bars I had received are full sized and didn’t last very long.
They are quite addicting!
Once my youngest niece got her hands on them she was hooked just as much as I am.
I need to order more of them and soon!

Time for Tea! ~ PG Tips Tea

A few years ago I switched to PG Tips tea and I'm not regretting it at all!
I love my tea to be strong and dark and this is perfect!
I know it's not the normal way to make it, but I tend to leave the tea bags in my cup while I drink it.
The tea is a dark, aromatic tea with a robust taste. I guarantee that you will like it. After about 5 to 10 minutes I'll add some milk to it.
I bought three boxes off of Amazon and am still going through them. I can get two cups of tea from one tea bag which is great!
